I don't buy all the issues (some are a bit "meat-centric" to be useful to me) but I love to browse them in the shop. And yes, he's super cute ;)&lt;br&gt;&lt;br&gt;OT- Curious what he said about bad service? In the States? Because as a Canuck living in the UK, I've got to say that there are days when I'm aching for some good old-fashioned North American customer service! I think it probably had more cream than butter.  So probably uses olive oil as a base.  Herbs? I don't know.  What herbs do you think would be good with hazelnuts and cream?  They really don't use a lot of herbs in their cooking in Emilia Romagna that I can remember, which was always surprising to us.  Don't even use garlic.&lt;br&gt;&lt;br&gt;I hope you do try with the gf flour mix. Except now I have to figure out how to make it gluten free.  It will be worth the effort!  But maybe the only effort will be substituting a different flour in your recipe. Definitely a place to start!  I love the brown butter and sage sauce but one of the most memorable ones I had was in Bologna, Italy -- it was with a nut sauce. Next, briefly cook in boiling water (2 or 3 minutes).  Finish in a pan of browned butter with freshly grated nutmeg.
