I think it probably had more cream than butter.  So probably uses olive oil as a base.  Herbs? I don't know.  What herbs do you think would be good with hazelnuts and cream?  They really don't use a lot of herbs in their cooking in Emilia Romagna that I can remember, which was always surprising to us.  Don't even use garlic.&lt;/p&gt;&lt;p&gt;I hope you do try with the gf flour mix. Except now I have to figure out how to make it gluten free.  It will be worth the effort!  But maybe the only effort will be substituting a different flour in your recipe. Definitely a place to start!  I love the brown butter and sage sauce but one of the most memorable ones I had was in Bologna, Italy -- it was with a nut sauce.
