EAT Boutique: Homemade Gnocchi or Gnocchi di Patate

    Gnocchi is one my favorite foods of all time. Except now I have to figure out how to make it gluten free. It will be worth the effort! But maybe the only effort will be substituting a different flour in your recipe. Definitely a place to start! I love the brown butter and sage sauce but one of the most memorable ones I had was in Bologna, Italy -- it was with a nut sauce. I still dream of it!

    Marsha, I was actually going to try making gnocchi with Bob's gluten free flour mix (just to see how it turns out). I have too many celiac friends who love gnocchi but can't eat it. Will let you know how it goes... Hmm... a nut sauce, tell me more! Hazelnuts? Butter? Herbs? I may have to try.... :)

    I'm sure it was hazelnuts as everything in that area is hazelnut. I think it probably had more cream than butter. So probably uses olive oil as a base. Herbs? I don't know. What herbs do you think would be good with hazelnuts and cream? They really don't use a lot of herbs in their cooking in Emilia Romagna that I can remember, which was always surprising to us. Don't even use garlic.

    Oh, gnocchi. I have a love/hate relationship with it; it either works or it doesn't, and there doesn't seem to be any rhyme or reason to it! Some days I'll get fluffy, light pillows of heaven, and others I'll get heavy little hockey pucks. When I'm in the mood for it but don't want to go to all the trouble, I often make spaetzle instead.
